Experimenting with Chicken Meatballs

Chicken meatballs in a homemade tomato sauce

On the bus returning home from work earlier on this week I thought “hmm chicken meatballs?”. Sure regular meatballs would be simpler to make, but I had all of the ingredients anyway so I figured I may as well give it a go.

For the chicken meatballs

  • 400g of chicken breast
  • 1 tbsp olive oil
  • Salt and pepper
  • 1 garlic clove
  • 1 egg
  • Fresh basil and parsley
  • 40g of all-purpose flour
  1. Cook the chicken breast in a pan with olive oil, salt, and pepper
  2. Add the minced garlic mid-way through to avoid burning
  3. Once cooked, shred the chicken and allow to cool
  4. Mix in the egg, chopped herbs, then season
  5. Add flour and form into balls. Then roll the balls in some extra flour
  6. Brown them in a large pan with olive oil, then simmer in a tomato sauce

For the tomato sauce:

  • 1 garlic clove
  • 1 white onion
  • Olive oil
  • 1 tin tomatoes
  • Salt and pepper
  • Chilli powder
  • Fresh basil and parsley
  1. Sauté minced garlic and diced onion in olive oil
  2. Add the tinned tomatoes
  3. Next add the salt, pepper and a dash of chilli powder
  4. Bring to a boil then simmer on a low heat for 20 minutes
  5. Remove from the heat, add the basil and parsley then blend

The meatballs didn’t keep their form and it wasn’t as easy as anticipated, but they tasted considerably better the next day I’ll give them that. Maybe if I’d used breadcrumbs and parmesan…
