I conquered my fear and made Chilli Con Carne

Chilli Con Carne

So I finally conquered my fear of mince meat. I used to be repulsed by the smell of it and coupled with not having the confidence to cook with it, it prevented me from cooking so many dishes, like chilli con carne, bolognese, lasagne, meatballs (but not burgers?).

Moving on, I made a chilli con carne and it was insanely good and I’ve gone chilli-mad for the past few weeks now (I’m also addicted to hot sauce).

  • 1 red onion diced
  • 2 garlic cloves minced
  • A mix of red, green and yellow peppers chopped
  • 500g mince beef
  • Salt and pepper
  • 2 tsp paprika
  • 2 tsp cumin
  • 1 tsp chilli powder
  • 1 beef stock cube
  • 1 tin kidney beans
  • 1 tin tomatoes
  • Coriander and parsley finely chopped
  1. Cook the onion, garlic and peppers until softened in some olive oil
  2. Add the mince and cook until browned, breaking it up with a spoon
  3. Season with salt and pepper, then and add the paprika, cumin and chilli powder
  4. Slowly stir in the stock until absorbed
  5. Add kidney beans, tinned tomatoes and some water
  6. Bring to a boil and then allow it to simmer for 20 minutes, stirring occasionally
  7. Serve with fresh coriander
